Boccon Ghiotti, also known as Paccheri, is the perfect pasta for this rich and savory octopus sauce.
How to Cook It:
Start by straining the pasta 1 minute before cooking time is up. While you warm the octopus sauce in a large pan, save some of the pasta water. Combine the strained pasta with the sauce, adding some of the pasta water to reach your desired consistency. Give everything a quick mix and let it cook for half a minute.
Before serving, add a touch of lemon zest and fresh parsley for extra flavor. Serve each plate with a generous spoonful of sauce and a sprinkle of parsley.
